Every Wednesday, Toddy Roche from Kilmore Seafresh potters up to County Wicklow with the fleet's freshest catch. 

Today we bought whole seabream...they'll be salted and oiled on the outside, lightly salted on the inside and stuffed with one bay leaf, and cooked under the grill for about 7 minutes each side. After resting for a few minutes, they'll be served with baby potatoes and cooked veg. 

For fresh fish at its best, pop into the carpark at Powerscourt Arms in Enniskerry Village every Wednesday from 09.00 - 13.00.

Glen Fuels Thai Prawn Curry

Ian is back with his monthly seafood recipe. Following the excells of Easter weekend, Ian recommends light and fragrant Thai gree prawn curry. 


Glen Fuels Thai Prawn Curry

Ingredients:

  • 1 tbsp sunflower oil
  • 1 shallot, finely chopped
  • 2 garlic cloves, finely chopped or minced
  • 1 stick of lemon grass (Tesco/Dunnes), optional
  • 1-2 tbsp Thai green curry paste (or to your own preference)
  • 125ml coconut milk (full fat or reduced fat)
  • 75g sugar snap peas, thickly sliced diagonally
  • 85g cooked prawns, peeled
  • 1 tsp soy sauce (or gluten-free tamari sauce)
  • 1 tsp lime juice
  • small handful coriander, chopped, to serve (optional)
  • handful of thingly sliced scallions, to serve (optional)
  • noodles or basmati rice, to serve

Curry Method:

  • Heat the oil in a wok or large saucepan. Add the shallot and stir-fry for 1-2 mins of low to medium heat (do not burn).
  • Add curry paste, lemon grass and garlic at low heat for max. 1 mins to release flavours (do not burn)
  • Add coconut cream and 50ml water and simmer for 2 mins.
  • Add sugar snap peas and cook for 1-2 mins until just beginning to soften.
  • Add prawns, soy sauce and lime juice and heat through (you're just warming up the prawns which won't take long).
  • Stir in the coriander and/or scallions and serve straight away with noodles/rice.

Rice Cooking Method

(serves 2)

  • Place one cup of rice and 1.5 cups water (tea cup size) into a pot
  • Bring to boil then reduce to simmer
  • Simmer until water absorbes (this will be quick so keep an eye)
  • Turn off heat, place a lid on the pot, let the rice steam while you cook the Thai curry
  • Fluff with a fork and serve

Glen Fuels Lemon Sole, Spuds and Salad

Our marine fuel manager eats lots of seafood. His recipe for February is pan fried lemon sole, homemade wedges, and salad. 

Lemon Sole:

(2 per person)
- Very light dusting on flour on both sides of the sole
- Heat some olive oil and a knob of butter in a frying pan. Move the pan to spread the oil/butter around
- Optional: add a teaspoon of capers
- Fry lemon sole, skin side down, for 2 minutes
- Flip over and fry flesh side down for 1-2 minutes

Wedges:

- Cut new potatoes into four wedges
- Toss with olive oil, a generous amount of sea salt and fresh/dry rosemary
- Place on roasting tray in preheated oven 220 Celcius
- Turn them over after about 10 minutes
- Will take 20-30 mins to cook

Salad: 

- 1 head baby gem lettuce cut into bitesize pieces
- Handful cherry tomatoes, halved
- Handful of radishes, finely sliced
- Good quality olive oil, sea salt and a drizzle of balsamic vinegar (all to taste)...toss

Fresh Salmon

One of the top health benefits of eating salmon, either raw or cooked, is that it is high in omega-3 fatty acids which improves brain function and decreased risk of cardiovascular problems. 

The Glen Fuels Salmon and Pasta Bowl is a quick and simple recipe contains carbohydrates, fiber, fat and protein. It can be prepared with just a five ingredients, a couple of pots and in the tiniest of kitchens without compromising on flavour. 

Salmon, Courgette and Penne

For two people: 

  • 200g penne (Rummo and Barilla brands)
  • 1 salmon fillet
  • 2 medium courgettes thinly sliced (optional: cut out the seeds)
  • 1 spring onion, finely chopped
  • 1 clove of garlic, peeled (leave it whole - do not chop)
  • 1/2 cup white wine
  • 2 tsp olive oil
  • Salt and Pepper

1. In a pot sautee spring onion on low heat for 5 minutes in 1 tsp of olive oil (lid on the pot).

2. Increase heat to medium and add sliced courgette. Allow to turn golden. Stir frequently for 3 - 5 minutes.

3. Season with a nice pinch of salt. Turn off the heat and leave to cool (uncovered).

4. Pat the salmon dry and cut into 1cm cubes.

5. In a seperate pot, heat 1 tsp olive oil and move the garlic clove through the oil for 1 minute. 

6. Remove the garlic and add the salmon.

7. On high heat cook the salmon so that it turns golden brown (do not burn). Add in the white wine and cook to evaporate. Add salt and pepper to taste. When the wine has evaporated (dried out), turn off the heat. 

8. Cook the pasta. Bring a pot of water to the boil. Add a generous amount of salt. The water will now boil hard. Add the penne and give a quick stir to seperate. Cook according to the instructions on the packet. 

9. While the pasta cooks, heat up the courgette sauce to dry out any liquid that may have formed during the cool-down period. When dried out, add in the salmon. 

10. Take a cup of the starchy pasta water and keep to one side. Then strain the pasta. Add the pasta to the salmon and courgette and mix together. If it's too dry, stir in a small amount of pasta water (over a medium heat).

Saving Lives at Sea - Major Incident Training

As an island, sea rescue services are of huge importance and Glen Fuels is proud to #support these services. Volunteer and career opportunities can be found on the respective websites.

Nicola Reddy Photography was invited to document rescue training in Kilmore Quay - 70 people worked hard to ensure the experience was as real as possible.

Involved in the training operation were Kilmore Quay/Fethard/Rosslare/Carne Coast Guards, Kilmore Quay and Fethard RNLI, Order of Malta Ambulance Wexford and the Coast Guard Helicopter from Waterford Base Incident Command Unit.
